- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 2 cups shredded cheese (cheddar or Mexican blend)
- 4 cups tortilla chips, crushed
- Sour cream for serving
- Green onions for serving
Instructions
- Brown the ground beef in a skillet over medium heat until no longer pink, about 5-7 minutes.
- Drain any excess fat.
- Combine the browned beef with black beans, corn, diced tomatoes, and taco seasoning in your slow cooker.
- Layer the crushed tortilla chips on top of the beef mixture.
- Add shredded cheese over the tortilla chips.
- Cook on low for 4-6 hours.
- Serve warm with sour cream and green onions.
Notes
You can prepare this casserole a day in advance and store in the refrigerator. Just pop it in the slow cooker in the morning for a hassle-free dinner.
