Description

A hearty and indulgent taco casserole made conveniently in a slow cooker, featuring layers of seasoned ground beef, crunchy tortilla chips, and melted cheese.


Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 4 cups tortilla chips, crushed
  • Sour cream for serving
  • Green onions for serving

Instructions

  1. Brown the ground beef in a skillet over medium heat until no longer pink, about 5-7 minutes.
  2. Drain any excess fat.
  3. Combine the browned beef with black beans, corn, diced tomatoes, and taco seasoning in your slow cooker.
  4. Layer the crushed tortilla chips on top of the beef mixture.
  5. Add shredded cheese over the tortilla chips.
  6. Cook on low for 4-6 hours.
  7. Serve warm with sour cream and green onions.

Notes

You can prepare this casserole a day in advance and store in the refrigerator. Just pop it in the slow cooker in the morning for a hassle-free dinner.
