Description

A refreshing salad featuring crisp cucumbers and zesty onions, dressed in olive oil and vinegar, perfect for summer gatherings.


Ingredients

  • 1 medium red onion, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon white wine vinegar or apple cider vinegar
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • 2 tablespoons fresh dill, chopped (or parsley)

Instructions

  1. Slice the cucumbers and onions thinly for uniform texture.
  2. Combine the cucumbers and onions in a large mixing bowl.
  3. Drizzle with olive oil and vinegar, adjusting to taste.
  4. Season with salt, pepper, and dill, and toss to combine.
  5. Refrigerate for at least 30 minutes before serving.

Notes

For a sweeter flavor, soak sliced onions in cold water for 10 minutes. This salad can be made a day in advance.
