A refreshing cucumber peach salad featuring crisp cucumbers, juicy peaches, and creamy avocado, all tossed in a vibrant dressing.
Ingredients

- 2 Tbsp. seasoned rice vinegar
- 2 Tbsp. fresh lime juice
- 1 medium shallot, thinly sliced
- 1 lb. Persian or English cucumbers, thinly sliced
- 2 medium peaches, cored and cut into chunks
- 1 medium avocado, cubed
- 1/4 cup thinly sliced fresh basil leaves
- 3 Tbsp. finely chopped fresh mint leaves
- 1 tsp. ground sumac
- 1/4 cup extra-virgin olive oil
- Kosher or sea salt to taste
Instructions
- Combine the seasoned rice vinegar, fresh lime juice, and thinly sliced shallots in a small bowl. Let this mixture soak for at least 10 minutes.
- Add the thinly sliced cucumbers, peach chunks, and cubed avocado to a large mixing bowl.
- Toss in the fresh basil and mint leaves.
- Pour your soaked shallot mixture over the produce, then add ground sumac, extra-virgin olive oil, and a few pinches of salt.
- Gently toss everything together until the salad glistens and all ingredients are coated.
- Taste and adjust salt if necessary.
Notes
For optimal freshness, prepare the dressing ahead of time, and add cucumbers and peaches just before serving to maintain crunch.
