Description

A refreshing cucumber peach salad featuring crisp cucumbers, juicy peaches, and creamy avocado, all tossed in a vibrant dressing.


Ingredients

  • 2 Tbsp. seasoned rice vinegar
  • 2 Tbsp. fresh lime juice
  • 1 medium shallot, thinly sliced
  • 1 lb. Persian or English cucumbers, thinly sliced
  • 2 medium peaches, cored and cut into chunks
  • 1 medium avocado, cubed
  • 1/4 cup thinly sliced fresh basil leaves
  • 3 Tbsp. finely chopped fresh mint leaves
  • 1 tsp. ground sumac
  • 1/4 cup extra-virgin olive oil
  • Kosher or sea salt to taste

Instructions

  1. Combine the seasoned rice vinegar, fresh lime juice, and thinly sliced shallots in a small bowl. Let this mixture soak for at least 10 minutes.
  2. Add the thinly sliced cucumbers, peach chunks, and cubed avocado to a large mixing bowl.
  3. Toss in the fresh basil and mint leaves.
  4. Pour your soaked shallot mixture over the produce, then add ground sumac, extra-virgin olive oil, and a few pinches of salt.
  5. Gently toss everything together until the salad glistens and all ingredients are coated.
  6. Taste and adjust salt if necessary.

Notes

For optimal freshness, prepare the dressing ahead of time, and add cucumbers and peaches just before serving to maintain crunch.
