Description

A refreshing cucumber tomato salad that celebrates the bounty of summer with vibrant flavors and a crisp texture.


Ingredients

  • 2 Fresh Cucumbers, diced
  • 3 Tomatoes, diced (Roma or Vine-ripened)
  • 1/4 cup Apple Cider Vinegar
  • 1/4 cup Olive Oil
  • 2 tablespoons Fresh Dill, chopped
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Chop the cucumbers and tomatoes into bite-sized pieces.
  2. Combine in a mixing bowl, tossing gently.
  3. Prepare the dressing by whisking together apple cider vinegar, olive oil, dill, salt, and pepper in a small bowl.
  4. Add the dressing to the salad and toss gently to coat.
  5. Serve immediately or chill in the refrigerator for enhanced flavor.
