- 1/3 cup cornstarch
- 1/4 teaspoon salt
- 2 cups milk
- 1/4 cup unsalted butter
- 1 teaspoon vanilla extract
- 3 egg yolks
- 1 pre-baked pie crust
- Whipped cream for topping
Instructions
- Combine 1 cup brown sugar, 1/3 cup cornstarch, and 1/4 teaspoon salt in a medium saucepan.
- Whisk in 2 cups milk over medium heat, stirring constantly until thickened (about 5-10 minutes).
- Beat 3 egg yolks in a small bowl. Slowly whisk in a spoonful of the hot mixture to temper the yolks.
- Return the tempered yolks to the saucepan and cook for another 2-3 minutes until thickened.
- Remove from heat and stir in 1/4 cup butter and 1 teaspoon vanilla extract.
- Pour the butterscotch filling into the pre-baked pie crust and cool to room temperature.
- Refrigerate for at least 2-3 hours to set.
- Top with whipped cream before serving.
Notes
For an added touch, sprinkle sea salt on top or mix in chocolate chips. The pie can be stored in the fridge for up to 3-4 days.
