Instructions
- Preheat your oven to 350°F (175°C) and grease your loaf pan.
- Combine the grated zucchini with the brown sugar and granulated sugar in a large bowl.
- Stir in the vegetable oil and vanilla extract until cohesive.
- Whisk together the flour, cocoa powder, baking soda, baking powder, and salt in a separate bowl.
- Gradually add the dry mixture to the wet ingredients, stirring gently to combine.
- Fold in the semi-sweet chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
Notes
For an even better flavor, bake a day in advance and let the bread rest overnight. Adjust baking time if using an air fryer.
