Description

A moist and indulgent bread that combines rich chocolate flavor with the subtle earthiness of zucchini, perfect for any occasion.


Ingredients

  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan.
  2. Combine the grated zucchini with the brown sugar and granulated sugar in a large bowl.
  3. Stir in the vegetable oil and vanilla extract until cohesive.
  4. Whisk together the flour, cocoa powder, baking soda, baking powder, and salt in a separate bowl.
  5. Gradually add the dry mixture to the wet ingredients, stirring gently to combine.
  6. Fold in the semi-sweet chocolate chips.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For an even better flavor, bake a day in advance and let the bread rest overnight. Adjust baking time if using an air fryer.
