Description
Delightfully crispy potato skins filled with melted cheese, crispy bacon, and topped with fresh green onions.
Ingredients

- 4 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 cup shredded cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup sour cream
- 2 tablespoons chopped green onions
Instructions
- Preheat the air fryer to 400°F (200°C).
- Wash and scrub the potatoes, pricking them with a fork.
- Rub the potatoes with olive oil and salt.
- Air fry the potatoes for 35-40 minutes, until tender.
- Once cool, slice potatoes in half and scoop out some flesh.
- Brush the insides with olive oil and sprinkle with salt.
- Air fry the potato halves for another 5-7 minutes until crispy.
- Remove from air fryer, top with cheese and bacon.
- Return to air fryer for 3-4 minutes to melt cheese.
- Serve hot, topped with sour cream and green onions.
Notes
Potato skins can be made ahead of time; just reheat in the air fryer before adding toppings.
