Description

Delightfully crispy potato skins filled with melted cheese, crispy bacon, and topped with fresh green onions.


Ingredients

Scale
  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 cup shredded cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup sour cream
  • 2 tablespoons chopped green onions

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Wash and scrub the potatoes, pricking them with a fork.
  3. Rub the potatoes with olive oil and salt.
  4. Air fry the potatoes for 35-40 minutes, until tender.
  5. Once cool, slice potatoes in half and scoop out some flesh.
  6. Brush the insides with olive oil and sprinkle with salt.
  7. Air fry the potato halves for another 5-7 minutes until crispy.
  8. Remove from air fryer, top with cheese and bacon.
  9. Return to air fryer for 3-4 minutes to melt cheese.
  10. Serve hot, topped with sour cream and green onions.

Notes

Potato skins can be made ahead of time; just reheat in the air fryer before adding toppings.
