Description

Ingredients

  • 1 pound chicken breast, diced
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Cook the gnocchi according to package instructions; drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season diced chicken with salt, pepper, and Italian seasoning. Cook until golden and no longer pink, about 5-7 minutes.
  3. Add minced garlic and spinach. Sauté until spinach wilts.
  4. Pour in chicken broth and heavy cream. Stir as mixture reaches a gentle simmer.
  5. Add grated Parmesan cheese, stirring until it melts into the sauce.
  6. Toss in the cooked gnocchi, mixing gently to coat in the sauce.
  7. Serve hot, garnished with additional Parmesan or fresh herbs.

Notes

For make-ahead meals, prepare chicken and sauce in advance, and reheat while cooking the gnocchi. Consider using an air fryer for the chicken for a faster option.
