- 1 lb shrimp, peeled and deveined
- 2 cups mixed vegetables (e.g., bell peppers, carrots, broccoli)
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper, to taste
- Green onions for garnish
Instructions
- Cook the noodles: Bring a pot of salted water to a boil. Cook the lo mein noodles according to the package instructions until al dente. Drain well and set aside.
- Heat the pan: In a large pan or wok, heat the sesame oil over medium heat. Allow the oil to shimmer before adding the next ingredients.
- Sauté aromatics: Add the minced garlic and grated ginger. Sauté for about 1 minute until aromatic.
- Cook the shrimp: Introduce the shrimp to the pan. Cook until they turn pink and opaque, about 3-4 minutes.
- Add vegetables: Toss in the mixed vegetables and stir-fry for an additional 2-3 minutes until they soften slightly.
- Combine with noodles: Add the cooked lo mein noodles and drizzle soy sauce. Toss everything together.
- Season: Taste and adjust with salt and pepper as desired.
- Serve and garnish: Plate your shrimp lo mein, garnishing with freshly cut green onions.
Notes
For a vegetarian version, replace shrimp with tofu and double the vegetables.
