Description

Deliciously moist muffins made with fresh zucchini, perfect for breakfast or a snack.


Ingredients

  • 1 1/2 cups grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1/4 cup milk
  • 1 large egg
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • Optional: chopped nuts or chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a muffin tin with paper liners.
  2. Combine the grated zucchini, sugar, vegetable oil, milk, and egg in a mixing bowl, mixing until well combined.
  3. Whisk together the flour, baking powder, baking soda, and salt in another bowl.
  4. Blend the dry ingredients into the wet mixture, stirring gently until just combined.
  5. Add optional nuts or chocolate chips if desired.
  6. Fill each muffin cup about two-thirds full with batter.
  7. Bake for 20-25 minutes until a toothpick comes out clean.
  8. Cool in the pan for a few minutes before transferring to a wire rack.

Notes

For best results, squeeze out excess moisture from grated zucchini before adding it to the mix. Customize with spices or additional mix-ins to suit your taste.
