Ingredients

- 1 1/2 cups grated zucchini
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 1/4 cup milk
- 1 large egg
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- Optional: chopped nuts or chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and prepare a muffin tin with paper liners.
- Combine the grated zucchini, sugar, vegetable oil, milk, and egg in a mixing bowl, mixing until well combined.
- Whisk together the flour, baking powder, baking soda, and salt in another bowl.
- Blend the dry ingredients into the wet mixture, stirring gently until just combined.
- Add optional nuts or chocolate chips if desired.
- Fill each muffin cup about two-thirds full with batter.
- Bake for 20-25 minutes until a toothpick comes out clean.
- Cool in the pan for a few minutes before transferring to a wire rack.
Notes
For best results, squeeze out excess moisture from grated zucchini before adding it to the mix. Customize with spices or additional mix-ins to suit your taste.
