- 6 large eggs
- 1 cup milk
- 1 cup shredded cheese
- 1 cup diced ham
- 1/2 cup diced bell peppers
- 1/2 cup spinach, chopped
- 1/4 cup diced onions
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C) and grease your muffin tin generously.
- Whisk together 6 eggs and 1 cup of milk until smooth and slightly frothy.
- Stir in 1 cup of shredded cheese, 1 cup of diced ham, 1/2 cup of diced bell peppers, 1/2 cup of chopped spinach, and 1/4 cup of diced onions. Season with salt and pepper.
- Pour the egg mixture into the greased muffin cups, filling them about three-quarters full.
- Bake for 20-25 minutes, or until the muffins are puffed and golden on top.
- Allow to cool for a few minutes before serving or storing for later.
