Description

A hearty and vibrant casserole featuring seasoned chicken, bell peppers, and zesty salsa, topped with melted cheese.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup bell peppers, diced
  • 1 cup onion, diced
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon fajita seasoning
  • Salt and pepper to taste
  • Tortilla chips (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, diced bell peppers, diced onion, black beans, corn, salsa, and fajita seasoning in a large bowl.
  3. Transfer the mixture into a greased 9×13 inch casserole dish and spread evenly.
  4. Top generously with shredded cheese.
  5. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  6. Serve warm, optionally topping with crushed tortilla chips.

Notes
