Description

A delicious one-pan meal featuring seared chicken thighs over fluffy rice, infused with garlic, onion, and peas, making it perfect for weeknight dinners.


Ingredients

  • 4 chicken thighs, bone-in
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 onion, chopped finely
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pour the olive oil into a large oven-safe skillet and heat over medium heat.
  3. Add the chopped onion and minced garlic, sautéing until translucent—about 3-5 minutes.
  4. Season the chicken thighs with salt, pepper, and paprika.
  5. Push the onion and garlic aside and place chicken thighs skin-side down in the skillet, searing for about 5 minutes on each side until golden brown.
  6. Incorporate the rice by stirring it with the onion and garlic.
  7. Pour in the chicken broth, stirring to combine.
  8. Lay the frozen peas over the rice.
  9. Bring to a gentle simmer, then cover and transfer to the oven.
  10. Bake for 30-35 minutes until the chicken is cooked through and the rice is tender.
  11. Remove from the oven and let it rest for 5 minutes before serving.

Notes

You can prepare components in advance. Use vegetables like carrots or bell peppers for added nutrition. Avoid overcrowding the skillet to ensure proper searing.
