Description

A delightful French potato salad featuring tender potatoes, crisp green beans, and a tangy dressing for a refreshing summer side dish.


Ingredients

  • 2 pounds potatoes, diced
  • 1 pound green beans, trimmed and cut into pieces
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons vinegar (white wine or apple cider)
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in a large pot of salted water for about 15 minutes, or until tender. Drain and let cool.
  2. Blanch the green beans in boiling water for 3-4 minutes until bright green and crisp. Drain and plunge into ice water.
  3. Combine the cooled potatoes, green beans, red onion, and parsley in a large mixing bowl.
  4. Whisk together olive oil, vinegar, mustard, salt, and pepper in a small bowl until emulsified.
  5. Dress the salad with the dressing and toss gently to coat.
  6. Serve chilled or at room temperature with fresh bread or your choice of protein.
