- 2 pounds potatoes, diced
- 1 pound green beans, trimmed and cut into pieces
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons vinegar (white wine or apple cider)
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- Boil the potatoes in a large pot of salted water for about 15 minutes, or until tender. Drain and let cool.
- Blanch the green beans in boiling water for 3-4 minutes until bright green and crisp. Drain and plunge into ice water.
- Combine the cooled potatoes, green beans, red onion, and parsley in a large mixing bowl.
- Whisk together olive oil, vinegar, mustard, salt, and pepper in a small bowl until emulsified.
- Dress the salad with the dressing and toss gently to coat.
- Serve chilled or at room temperature with fresh bread or your choice of protein.
