Description

Delight in these light and chewy cookies featuring vibrant Fruity Pebbles and creamy white chocolate, reminiscent of childhood breakfasts.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Fruity Pebbles cereal
  • 1 cup white chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter, brown sugar, and granulated sugar using an electric mixer until fluffy.
  3. Add the pudding mix, mixing until blended.
  4. Incorporate the eggs one at a time, mixing well before adding the next, followed by the vanilla extract.
  5. Blend the flour, baking soda, and salt in a separate bowl, then gradually add to the wet mixture.
  6. Fold in the Fruity Pebbles and white chocolate chips.
  7. Scoop rounded tablespoons of dough onto ungreased baking sheets, ensuring space between cookies.
  8. Bake for 10-12 minutes, until edges are golden brown but centers look slightly underbaked.
  9. Cool the cookies on baking sheets for a few minutes before transferring to wire racks.

Notes

For a twist, replace white chocolate chips with milk or dark chocolate and add nuts or additional cereals for variation.
