- 8 ounces pasta (spaghetti or any preferred type)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add your choice of pasta and cook according to package instructions. Once tender, drain and set aside, retaining a cup of pasta water.
- Heat the olive oil: In a large skillet over medium heat, warm the olive oil until it shimmers.
- Sauté the garlic: Add minced garlic to the skillet, stirring for about a minute or until it turns golden and fragrant. Be careful not to let it burn.
- Combine pasta and sauce: Add the drained pasta to the skillet. Toss gently to coat the noodles in the garlicky oil.
- Stir in Parmesan and herbs: Sprinkle the grated Parmesan cheese and parsley over the pasta. Combine until the cheese melts and the pasta becomes creamy.
- Season and serve: Season with salt, pepper, and red pepper flakes if desired. Serve immediately on plates, garnished with extra parsley and Parmesan.
