Description

Delightfully tangy and sweet, these gluten-free lemon bars feature a buttery crust and a smooth, creamy filling perfect for any occasion.


Ingredients

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 4 eggs
  • 1 cup granulated sugar
  • 1/2 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • 1/4 cup powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare your 8×8 inch baking pan by greasing it lightly or lining it with parchment paper.
  2. Whisk together the gluten-free flour, powdered sugar, and salt in a mixing bowl.
  3. Stir in the melted butter until the mixture resembles wet sand. Press firmly into the bottom of your prepared pan.
  4. Whisk the eggs in another bowl until frothy, then add the granulated sugar, lemon juice, and lemon zest. Stir until smooth.
  5. Pour the lemon mixture over the crust, spreading evenly.
  6. Bake for 20-25 minutes or until the edges pull away from the sides and golden.
  7. Remove from the oven and let cool at room temperature, then dust with powdered sugar before cutting into squares.

Notes

For a tropical twist, substitute lime juice for lemon juice. Store leftovers in the refrigerator for up to a week.
