- 1 cup gluten-free all-purpose flour
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 4 eggs
- 1 cup granulated sugar
- 1/2 cup freshly squeezed lemon juice
- Zest of 1 lemon
- 1/4 cup powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Prepare your 8×8 inch baking pan by greasing it lightly or lining it with parchment paper.
- Whisk together the gluten-free flour, powdered sugar, and salt in a mixing bowl.
- Stir in the melted butter until the mixture resembles wet sand. Press firmly into the bottom of your prepared pan.
- Whisk the eggs in another bowl until frothy, then add the granulated sugar, lemon juice, and lemon zest. Stir until smooth.
- Pour the lemon mixture over the crust, spreading evenly.
- Bake for 20-25 minutes or until the edges pull away from the sides and golden.
- Remove from the oven and let cool at room temperature, then dust with powdered sugar before cutting into squares.
Notes
For a tropical twist, substitute lime juice for lemon juice. Store leftovers in the refrigerator for up to a week.
