- 1 pound ground turkey
- 1 cup rice
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cucumber, diced
- 2 tablespoons fresh lemon juice
- Fresh herbs for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat until shimmering.
- Sauté the chopped onion and minced garlic until the onion becomes translucent, about 2–3 minutes.
- Cook the ground turkey in the skillet, breaking it up with a spatula, until browned, about 5–7 minutes.
- Add the chopped bell pepper, cumin, paprika, salt, and pepper; stir gently for 3–4 minutes.
- Incorporate the rice and pour in the chicken broth; bring to a boil.
- Simmer on low heat, covered, for about 15–20 minutes, until the rice absorbs the liquid.
- Prepare the cucumber salad by mixing diced cucumber with lemon juice, seasoning with salt and pepper.
- Serve the skillet hot, topped with cucumber salad and fresh herbs if desired.
Notes
Feel free to customize with other veggies or grains as desired. Leftovers can be stored in the fridge for up to 3–4 days.
