Description

A timeless treasure, Grandma’s Cinnamon Coffee Cake is a delightful treat bursting with the warm flavors of cinnamon and brown sugar, perfect for breakfast or brunch.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup powdered sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan, then flour it lightly to prevent sticking.
  2. Cream together the softened butter and granulated sugar in a large mixing bowl until light and fluffy, about 3-4 minutes.
  3. Beat in the eggs one at a time, fully incorporating each after addition. Stir in the vanilla extract.
  4. Combine the flour, baking powder, salt, and ground cinnamon in another bowl. Whisk to blend evenly.
  5. Add the dry ingredients to the creamy mixture, alternating with the milk, mixing until just combined.
  6. Pour half of the batter into the prepared pan and spread it evenly.
  7. Mix the brown sugar, cinnamon, and chopped nuts (if using). Sprinkle half over the batter in the pan.
  8. Pour the remaining batter over the filling and sprinkle the rest of the cinnamon sugar mixture on top.
  9. Bake for 30-35 minutes, or until the cake is golden brown and a toothpick comes out clean.
  10. Allow the cake to cool in the pan. Dust with powdered sugar before serving.

Notes

Make-ahead: Prepare the batter a few hours in advance and refrigerate until ready to bake. Can also be made in an air fryer.
