Description

A vibrant pasta salad featuring fresh vegetables and a creamy Green Goddess dressing, perfect for picnics and gatherings.


Ingredients

  • 8 oz pasta (fusilli or rotini)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/2 cup Green Goddess dressing
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil, then add your pasta. Cook according to package instructions until al dente. Drain and rinse under cold water.
  2. Mix the vegetables: In a large mixing bowl, combine the cooled pasta with halved cherry tomatoes, diced cucumber, diced bell pepper, and thinly sliced red onion.
  3. Toss with dressing: Pour the Green Goddess dressing over the pasta and veggies. Toss gently until everything is coated.
  4. Season: Taste and add salt and pepper as desired.
  5. Serve: Chill in the refrigerator for at least 30 minutes or serve at room temperature.

Notes

For optimal flavor, prepare the salad a day in advance and keep the dressing separate until serving. This salad is also great warm with freshly prepared veggies.
