Ingredients

- 8 oz pasta (fusilli or rotini)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1/2 cup Green Goddess dressing
- Salt and pepper to taste
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil, then add your pasta. Cook according to package instructions until al dente. Drain and rinse under cold water.
- Mix the vegetables: In a large mixing bowl, combine the cooled pasta with halved cherry tomatoes, diced cucumber, diced bell pepper, and thinly sliced red onion.
- Toss with dressing: Pour the Green Goddess dressing over the pasta and veggies. Toss gently until everything is coated.
- Season: Taste and add salt and pepper as desired.
- Serve: Chill in the refrigerator for at least 30 minutes or serve at room temperature.
Notes
For optimal flavor, prepare the salad a day in advance and keep the dressing separate until serving. This salad is also great warm with freshly prepared veggies.
