Description

A delightful fusion of a classic grilled cheese sandwich and a burrito, filled with melted cheese, seasoned rice, and optional protein for a comforting meal.


Ingredients

  • 2 large flour tortillas
  • 1 cup shredded cheese (Cheddar, Monterey Jack, or a blend)
  • 1 cup cooked rice
  • 1/2 cup black beans (optional)
  • 1/2 cup seasoned ground beef or chicken (optional)
  • 1/4 cup sour cream
  • Salsa or hot sauce
  • Butter for grilling

Instructions

  1. Begin by heating a non-stick skillet over medium heat.
  2. Lay one tortilla in the skillet and sprinkle half of the shredded cheese on top.
  3. Add the cooked rice, black beans, and ground meat (if using), spreading evenly.
  4. Top with the remaining cheese and place the second tortilla on top, pressing down gently.
  5. Cook until the bottom tortilla is golden brown, about 3-4 minutes.
  6. Using a spatula, flip the burrito to grill the other side until golden and the cheese is melted.
  7. Remove from heat, slice in half, and serve with sour cream and salsa for dipping.

Notes

You can customize your burrito by adding extra veggies or using corn tortillas. Avoid overstuffing to keep the burrito from bursting.
