- 1 pound ground beef
- 1 cup pizza sauce
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 cup pepperoni slices
- 6 flour tortillas
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Sauté the beef in olive oil over medium heat until browned; drain excess fat.
- Combine the pizza sauce, Italian seasoning, salt, and pepper with the beef mixture and simmer for a few minutes.
- Mix in the pepperoni and half of the mozzarella cheese.
- Prepare the tortillas and fill each with the beef mixture, then roll them tightly.
- Arrange the rolled tortillas seam-side down in a baking dish.
- Dress with the remaining pizza sauce and sprinkle with remaining mozzarella and Parmesan cheese.
- Bake for 25-30 minutes until cheese is golden-brown and bubbly.
- Cool for a few minutes before serving.
Notes
You can assemble these enchiladas in advance and refrigerate overnight. Consider customizing with your favorite vegetables.
