Description

Delicious zucchini boats filled with seasoned ground turkey, marinara sauce, and melted mozzarella cheese, offering a comforting and healthy meal.


Ingredients

  • 4 medium zucchini
  • 1 lb ground turkey
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut zucchini in half lengthwise and scoop out the middle to create boats.
  3. Heat olive oil in a skillet and sauté onion and garlic until soft, about 3-4 minutes.
  4. Add ground turkey to the skillet and cook until browned, about 6-8 minutes.
  5. Stir in marinara sauce, Italian seasoning, salt, and pepper; simmer for 5 minutes.
  6. Fill zucchini boats with the turkey mixture and place them in a baking dish.
  7. Top with shredded mozzarella cheese.
  8. Cover with foil and bake for 25 minutes.
  9. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
  10. Serve hot and enjoy!
