- 4 medium zucchini
- 1 lb ground turkey
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Preheat the oven to 375°F (190°C).
- Cut zucchini in half lengthwise and scoop out the middle to create boats.
- Heat olive oil in a skillet and sauté onion and garlic until soft, about 3-4 minutes.
- Add ground turkey to the skillet and cook until browned, about 6-8 minutes.
- Stir in marinara sauce, Italian seasoning, salt, and pepper; simmer for 5 minutes.
- Fill zucchini boats with the turkey mixture and place them in a baking dish.
- Top with shredded mozzarella cheese.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for an additional 10 minutes until cheese is bubbly.
- Serve hot and enjoy!
