- 1/4 cup neutral oil (such as avocado, canola, or grapeseed oil)
- 2 Tbsp. mayonnaise
- 2 Tbsp. fresh lime juice
- 1 garlic clove

Instructions
- Prepare the Corn Salad: In a large mixing bowl, combine the corn, avocado, red onion, jalapeño, cilantro, lime juice, cumin, and paprika. Toss together gently to blend flavors. Season with kosher salt to taste. Set aside.
- Make the Creamy Cilantro Sauce: In a blender, combine cilantro leaves, Greek yogurt, neutral oil, mayonnaise, lime juice, garlic, salt, and pepper. Blend until smooth.
- Cook the Halloumi: Pat the halloumi slices dry. Heat oil in grill pan over medium-high heat. Sear halloumi for about 2 minutes until golden, flip and cook for an additional 2 minutes.
- Assemble the Tacos: Spread a spoonful of cilantro sauce on each tortilla, layer with halloumi, corn salad, and drizzle more sauce. Garnish with extra cilantro and enjoy!
