Description

Delicious Hawaiian Chicken marinated in a blend of soy sauce, brown sugar, and fresh pineapple, delivering sweet and savory flavors.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh pineapple, diced
  • 1/2 cup bell pepper, chopped
  • 1/2 cup onion, chopped
  • 1/3 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Whisk together the soy sauce, brown sugar, rice vinegar, garlic, ginger, salt, and pepper in a bowl until well combined.
  2. Marinate the chicken in a resealable bag with the marinade for at least 30 minutes, or 15 minutes if in a hurry.
  3. Heat your grill or skillet over medium-high heat.
  4. Cook the chicken for about 6-7 minutes on each side, or until cooked through (internal temperature of 160°F).
  5. Add the pineapple, bell pepper, and onion in the last few minutes of cooking until tender.
  6. Serve the chicken over fluffy rice topped with the grilled veggies and pineapple.

Notes

For best flavor, marinate the chicken overnight. Feel free to customize with different vegetables or chicken thighs.
