Ingredients

Scale
  • 1 box of yellow cake mix
  • 1 cup of cottage cheese
  • 1 cup of Cool Whip
  • 1 cup of diced fruit (such as strawberries, peaches, or mixed berries)
  • 1/2 cup of sugar
  • 1 teaspoon of vanilla extract

  2. Prepare the cake mix as directed on the box and pour the batter into the prepared pan.
  3. Bake the cake for the duration specified on the box or until a toothpick comes out clean when inserted in the center.
  4. Allow it to cool completely.
  5. Mix together the cottage cheese, sugar, vanilla extract, and diced fruit in a large bowl.
  6. Spread the fruit mixture evenly over the top of the cooled cake.
  7. Top with Cool Whip, spreading gently to cover all the fruit.
  8. Refrigerate the cake for at least 120 minutes before serving.
  9. Slice and serve, enjoying each heavenly bite!

Notes

Make-ahead tips: Prepare the cake a day in advance for deeper flavors. Customize with different fruits or use Greek yogurt instead of cottage cheese.
