- 1000 g bread flour
- 200 g sourdough starter
- 750 g warm water
- 30 g olive oil
- 30 g lard (or substitute with olive oil)
- 60 g sugar
- 20 g salt
Instructions
- Combine Ingredients: In a large mixing bowl, combine the bread flour, sourdough starter, water, olive oil, lard, sugar, and salt. Mix until the ingredients form a shaggy dough.
- Let the dough rest for 20 minutes.
- Perform the ‘stretch and fold’ method every 20 minutes for two hours.
- Allow the dough to ferment at room temperature for an additional two hours.
- Take the fermented dough and divide it into portions of 280-300 grams.
- Place the dough balls into small, oiled plastic containers. Seal them and pop them into the freezer.
Notes
Ensure the dough is well-sealed before freezing to prevent freezer burn.
