- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 4 large eggs
- 1 cup granulated sugar (for filling)
- 1/2 cup freshly squeezed lemon juice
- 2 tablespoons lemon zest
- 1/4 cup powdered sugar (for dusting)
Instructions
- Preheat the oven to 350°F (175°C) and grease your 9×13 inch baking pan.
- Cream together the butter and 1/2 cup sugar in a large mixing bowl until light and fluffy, about 2-3 minutes.
- Add the flour and salt gradually, mixing until just combined.
- Press the mixture evenly into the bottom of the prepared baking pan and bake for 15-20 minutes or until lightly golden.
- Whisk together the eggs, 1 cup sugar, lemon juice, and lemon zest in another bowl until smooth.
- Pour the filling over the baked crust and return to the oven. Bake for 20-25 minutes until the filling is set but slightly jiggly.
- Allow to cool completely in the pan before dusting with powdered sugar.
- Slice, serve, and enjoy!
