Description

Delicious homemade lemon bars featuring a buttery crust and zesty lemon filling, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 cup granulated sugar (for filling)
  • 1/2 cup freshly squeezed lemon juice
  • 2 tablespoons lemon zest
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your 9×13 inch baking pan.
  2. Cream together the butter and 1/2 cup sugar in a large mixing bowl until light and fluffy, about 2-3 minutes.
  3. Add the flour and salt gradually, mixing until just combined.
  4. Press the mixture evenly into the bottom of the prepared baking pan and bake for 15-20 minutes or until lightly golden.
  5. Whisk together the eggs, 1 cup sugar, lemon juice, and lemon zest in another bowl until smooth.
  6. Pour the filling over the baked crust and return to the oven. Bake for 20-25 minutes until the filling is set but slightly jiggly.
  7. Allow to cool completely in the pan before dusting with powdered sugar.
  8. Slice, serve, and enjoy!
