Description

A delightful twist on traditional pizza, using zucchini as a light and nutritious base, topped with cheese and your choice of toppings.


Ingredients

  • 2 medium zucchinis, sliced
  • 1 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sliced pepperoni
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice the zucchinis into round slices about 1/4 inch thick and arrange them on the prepared baking sheet.
  3. Drizzle with olive oil, then sprinkle with salt, pepper, and Italian seasoning.
  4. Bake for about 10 minutes, letting them soften slightly.
  5. Add a layer of pizza sauce over each round.
  6. Top with mozzarella cheese and pepperoni slices.
  7. Sprinkle grated Parmesan on top.
  8. Return to the oven and bake for another 10-15 minutes until the cheese is bubbly and golden.

Notes

For a vegetarian option, skip the pepperoni. Customize your toppings as desired for a personal touch.
