- 2 medium zucchinis, sliced
- 1 cup pizza sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup sliced pepperoni
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 425°F (220°C).
- Slice the zucchinis into round slices about 1/4 inch thick and arrange them on the prepared baking sheet.
- Drizzle with olive oil, then sprinkle with salt, pepper, and Italian seasoning.
- Bake for about 10 minutes, letting them soften slightly.
- Add a layer of pizza sauce over each round.
- Top with mozzarella cheese and pepperoni slices.
- Sprinkle grated Parmesan on top.
- Return to the oven and bake for another 10-15 minutes until the cheese is bubbly and golden.
