  • 2 large eggs

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish or cast-iron skillet.
  2. Meld sweet potato puree, honey, and melted butter in a mixing bowl until well combined.
  3. Whisk together cornmeal, flour, baking powder, and salt in another bowl.
  4. Gradually pour the dry mixture into the sweet potato blend, alternating with milk, until a smooth batter forms.
