A moist and decadent chocolate cake made easily in an Instant Pot, perfect for any occasion.
Ingredients

- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup vegetable oil
- 1/2 cup buttermilk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup boiling water
Instructions
- Combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a mixing bowl.
- Add the vegetable oil, buttermilk, eggs, and vanilla to the dry ingredients and mix until smooth.
- Gradually stir in the boiling water until combined.
- Pour the batter into a greased 7-inch cake pan and smooth the top.
- Set the Instant Pot to sauté mode, pour in 1 cup of water, and place the cake pan on the trivet inside.
- Close the lid, set the pressure valve to sealing, and cook on high pressure for 30 minutes.
- Allow a natural release for 10 minutes before quick releasing the remaining pressure.
- Remove the cake from the pot and let it cool before slicing.
Notes
Make sure ingredients are at room temperature for the best texture. You can also bake this cake in a conventional oven at 350°F for 25-30 minutes.
