- 1/4 cup coconut flour
- 1/4 cup erythritol (or other keto sweetener)
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 tablespoon vanilla extract
- 1 tablespoon cinnamon
- 1/4 cup cream cheese, softened
- 1/4 cup powdered erythritol (for frosting)
- 1 tablespoon heavy cream (for frosting)
Instructions
- Preheat the oven to 350°F (175°C).
- Combine almond flour, coconut flour, erythritol, baking powder, and salt in a mixing bowl.
- Whisk together the eggs, melted butter, and vanilla extract in a separate bowl.
- Pour the wet ingredients into the dry ingredients and mix until cohesive.
- Roll out the dough between parchment paper into a rectangle about 1/4 inch thick.
- Spread the softened cream cheese evenly over the dough.
- Sprinkle with cinnamon and erythritol.
- Roll the dough tightly from one end and slice into rolls.
- Place the rolls on a parchment-lined baking sheet and bake for 15-20 minutes.
- Blend powdered erythritol and heavy cream to make the frosting and drizzle over warm rolls.
