Instructions
- In a large bowl, whisk together the flour, eggs, milk, sugar, salt, vanilla extract, and melted butter until smooth. Let the batter rest for about 30 minutes.
- Heat a non-stick skillet over medium heat. Lightly grease it with butter until its hot.
- Pour a small amount of batter (about 1/4 cup) into the skillet and swirl quickly to cover the bottom evenly. Cook until the edges appear golden, then gently flip and cook the other side for just a minute.
- Repeat this process until all the batter is used, stacking the crepes on a plate.
- Once the crepes have cooled, layer them with your desired frosting or filling between each one.
- Chill the layered cake in the refrigerator for a few hours, or overnight, before slicing and serving.
Notes
This cake can be made a day ahead for deeper flavors. Ensure to cool the crepes properly to maintain their texture.
