- 2 cups all-purpose flour
- 4 large eggs
- 3 cups milk
- 1/4 cup melted butter
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1 cup whipping cream
- 2 tablespoons powdered sugar
- Fresh fruit or chocolate for topping (optional)
Instructions
- In a large bowl, whisk together the flour, eggs, milk, melted butter, sugar, and vanilla until the batter is smooth and free of lumps. Let it rest for 30 minutes.
- Heat your non-stick skillet over medium heat. Pour about 1/4 cup of batter into the skillet, swirling gently. Cook until edges are lightly golden, about 1-2 minutes, then flip and cook the other side for an additional minute.
- Transfer each crepe to a wire rack to cool completely while stacking them lightly.
- In a separate, chilled bowl, whip the cream with powdered sugar until soft peaks form.
- Layer the cooled crepes with whipped cream, spreading evenly between each. Stack them high.
- If desired, top with fresh fruits or a drizzle of chocolate.
- Chill your cake in the refrigerator for at least an hour before serving.
Notes
You can make the crepes and whipped cream a day in advance. For better results, use parchment paper between stacked crepes.
