Description

Delight in these soft, buttery lemon blondies that combine sweet brown sugar with a zesty lemon kick, perfect for any occasion.


Ingredients

  • 2 cups brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Zest of 1 lemon
  • 1/4 cup freshly squeezed lemon juice
  • Powdered sugar for icing

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×13 inch baking pan with butter or non-stick spray.
  2. In a large mixing bowl, melt the butter until silky and warm. Stir in the brown sugar until smooth.
  3. Crack in the eggs and add the vanilla extract. Mix until glossy.
  4. Gradually sift in the flour, baking powder, salt, lemon zest, and lemon juice. Fold gently with a spatula.
  5. Pour the batter into the prepared baking pan, spreading evenly.
  6. Bake for 25-30 minutes until golden brown and a toothpick inserted comes out clean.
  7. Let cool in the pan for about 10 minutes, then transfer to a cooling rack. Slice into squares and drizzle with icing if desired.
