Description
Fluffy, golden-brown rolls filled with luscious lemon curd and topped with a sweet lemon glaze, perfect for brunch or an afternoon snack.
Ingredients
Scale
- 4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 packet active dry yeast
- 1 teaspoon salt
- 1 cup milk (warm)
- 1/4 cup unsalted butter (melted)
- 2 large eggs
- 1 cup lemon curd
- 1 cup powdered sugar
- 2–3 tablespoons lemon juice
Instructions
- Combine warm milk and granulated sugar in a large bowl. Sprinkle active dry yeast over the top and let it sit for about 5 minutes until foamy.
- Add melted butter, eggs, and salt to the yeast mixture. Mix gently until combined.
- Gradually add flour, one cup at a time, until a soft dough begins to form.
- Knead the dough for about 5-7 minutes until smooth and elastic.
- Place the kneaded dough in a greased bowl, cover with a towel, and let it rise until doubled in size, about 1 hour.
- Preheat your oven to 350°F (175°C). Roll the dough into a rectangular shape and spread lemon curd evenly over it.
- Roll the dough tightly into a log and slice into individual rolls 1-2 inches wide.
- Let rolls rise for another 30 minutes in a greased baking pan.
- Bake for 20-25 minutes until golden brown.
- Prepare the glaze by whisking powdered sugar and lemon juice until smooth, then drizzle over warm rolls.
