Deliciously soft and pillowy lemon sweet rolls drizzled with a zesty glaze, perfect for brunch or a sweet treat.

- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 teaspoon salt
- 1 packet (2 1/4 teaspoons) active dry yeast
- 3/4 cup warm milk
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1/2 cup lemon curd
- 1 cup powdered sugar
- 1–2 tablespoons lemon juice
Instructions
- Combine the warm milk, yeast, and sugar in a bowl. Allow to sit for 5-10 minutes until frothy.
- Whisk together the flour and salt in a large bowl. Pour in the yeast mixture, melted butter, and egg. Mix until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a kitchen towel, and let rise in a warm place until doubled in size, about 60 minutes.
- Roll the risen dough into a rectangle, spread lemon curd over it, then tightly roll up and cut into equal rolls.
- Arrange the rolls in a greased baking dish, cover, and let rise for another 30 minutes. Preheat oven to 350°F (175°C).
- Bake for 20-25 minutes until golden brown.
- Mix powdered sugar and lemon juice to create the glaze, then drizzle over rolls before serving.
Notes
To make ahead, prepare the rolls up to the second rise and refrigerate overnight. Allow to come to room temperature before baking.
