Description
Delightful lemon sweet rolls filled with creamy lemon curd, perfect for any occasion.
Ingredients
Scale
- 2 1/4 teaspoons active dry yeast
- 1/4 cup sugar
- 1/2 cup warm milk (110°F)
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 4 cups all-purpose flour
- 1/2 teaspoon salt
- 1 cup lemon curd
- 1 cup powdered sugar
- 2 tablespoons lemon juice
- Zest of 1 lemon
Instructions
- Begin by activating the yeast: In a small bowl, dissolve the yeast and 1 tablespoon of sugar in warm milk. After five minutes, it should become frothy.
- In a large mixing bowl, blend the melted butter, remaining sugar, and eggs until well combined. Stir in the foamy yeast mixture.
- Gradually add the flour and salt, mixing until a soft dough forms.
- Knead the dough for about 5-7 minutes until smooth and elastic, then cover and let rise for 1 hour.
- Once risen, roll the dough into a rectangle, spread the lemon curd evenly over the surface.
- Carefully roll the dough tightly into a log and slice into 1-inch thick rolls.
- Let the rolls rise for an additional 30 minutes while preheating your oven to 350°F.
- Bake for 20-25 minutes, or until golden brown.
- Prepare the glaze by whisking together powdered sugar, lemon juice, and zest until smooth, then drizzle over warm rolls.
Notes
Make-ahead tips: Prepare the dough the night before and refrigerate for slow rising.
