- 1 lb ground beef (or ground turkey or plant-based meat)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes and green chilies
- 1 package (8 oz) cream cheese
- 2 cups shredded cheddar cheese
- 1 cup diced bell peppers
- 1 cup diced onion
- 2 cloves garlic, minced
- 1 tablespoon taco seasoning
- Salt and pepper, to taste
- Tortilla chips for serving
Instructions
- In a large skillet over medium heat, brown the ground beef until fully cooked, then drain excess fat.
- Add in the diced onions, bell peppers, and minced garlic, and sauté until softened.
- Stir in the black beans, corn, diced tomatoes with chilies, cream cheese, and taco seasoning, mixing until melted.
- Gradually add shredded cheddar cheese, stirring until melted into a velvety dip.
- Season with salt and pepper to taste. Serve warm.
Notes
Make-ahead tip: Prepare a few hours in advance and keep warm in a crockpot. Adjust spice levels to taste.
