Description

A creamy and cheesy dip loaded with spices, black beans, and corn, perfect for gatherings and celebrations.


Ingredients

  • 1 lb ground beef (or ground turkey or plant-based meat)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes and green chilies
  • 1 package (8 oz) cream cheese
  • 2 cups shredded cheddar cheese
  • 1 cup diced bell peppers
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • Salt and pepper, to taste
  • Tortilla chips for serving

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked, then drain excess fat.
  2. Add in the diced onions, bell peppers, and minced garlic, and sauté until softened.
  3. Stir in the black beans, corn, diced tomatoes with chilies, cream cheese, and taco seasoning, mixing until melted.
  4. Gradually add shredded cheddar cheese, stirring until melted into a velvety dip.
  5. Season with salt and pepper to taste. Serve warm.

Notes

Make-ahead tip: Prepare a few hours in advance and keep warm in a crockpot. Adjust spice levels to taste.
