Description

A deliciously creamy orzo dish featuring tender chicken, vibrant spinach, and sun-dried tomatoes, perfect for any occasion.


Ingredients

  • 4 Chicken Breasts
  • 1 cup Orzo Pasta
  • 2 cups Fresh Spinach
  • ½ cup Sun-Dried Tomatoes
  • ½ cup Cream
  • 4 cups Chicken Broth
  • 3 cloves Garlic, minced
  • 1 tsp Italian Seasoning
  • Salt and Pepper to taste
  • 2 tbsp Olive Oil
  • ½ cup Parmesan Cheese (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season chicken breasts with salt and pepper, then add them to the pot. Cook until golden brown, about 6-7 minutes per side, then remove from pot.
  3. Add minced garlic and sauté until fragrant, about 30 seconds.
  4. Stir in sun-dried tomatoes and cook for an additional minute.
  5. Pour in chicken broth and add orzo. Bring to boil, reduce heat, cover, and simmer for 10-12 minutes.
  6. Incorporate spinach and cream, stirring until spinach wilts.
  7. Return chicken to the pot and combine until well mixed in the sauce.
  8. Serve warm, topped with Parmesan cheese if desired.

Notes

Make ahead by prepping chicken and veggies the night before. Experiment with additional vegetables or herbs for customization.
