- 4 Chicken Breasts
- 1 cup Orzo Pasta
- 2 cups Fresh Spinach
- ½ cup Sun-Dried Tomatoes
- ½ cup Cream
- 4 cups Chicken Broth
- 3 cloves Garlic, minced
- 1 tsp Italian Seasoning
- Salt and Pepper to taste
- 2 tbsp Olive Oil
- ½ cup Parmesan Cheese (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Season chicken breasts with salt and pepper, then add them to the pot. Cook until golden brown, about 6-7 minutes per side, then remove from pot.
- Add minced garlic and sauté until fragrant, about 30 seconds.
- Stir in sun-dried tomatoes and cook for an additional minute.
- Pour in chicken broth and add orzo. Bring to boil, reduce heat, cover, and simmer for 10-12 minutes.
- Incorporate spinach and cream, stirring until spinach wilts.
- Return chicken to the pot and combine until well mixed in the sauce.
- Serve warm, topped with Parmesan cheese if desired.
