- 4 large flour tortillas
- 4 eggs
- 1 cup shredded cheese
- 1 cup cooked black beans
- 1 cup diced bell peppers
- 1/2 cup diced onions
- 1 avocado, sliced
- Salsa (for serving)
- Salt and pepper to taste
Instructions
- Heat a drizzle of oil in a skillet over medium heat. Add the diced onions and bell peppers, sautéing until soft, around 4-5 minutes.
- Crack the eggs into the skillet, seasoning with salt and pepper. Scramble gently until fully cooked, about 3-4 minutes.
- Warm the flour tortillas in a separate pan, one at a time, for about 30 seconds on each side.
- Lay a warm tortilla on a plate and spoon a generous scoop of the egg mixture in the center.
- Top with black beans, cheese, and avocado slices.
- Roll up the burrito, tucking in the sides for a tight seal. Place seam-side down on the plate.
- Serve hot, accompanied by salsa.
Notes
Make filling ahead of time and store in the fridge. For extra crispiness, try air frying the assembled burritos.
