Description

Celebrate your mornings with these flavorful Mexican Breakfast Burritos, filled with eggs, black beans, cheese, and fresh veggies.


Ingredients

  • 4 large flour tortillas
  • 4 eggs
  • 1 cup shredded cheese
  • 1 cup cooked black beans
  • 1 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 avocado, sliced
  • Salsa (for serving)
  • Salt and pepper to taste

Instructions

  1. Heat a drizzle of oil in a skillet over medium heat. Add the diced onions and bell peppers, sautéing until soft, around 4-5 minutes.
  2. Crack the eggs into the skillet, seasoning with salt and pepper. Scramble gently until fully cooked, about 3-4 minutes.
  3. Warm the flour tortillas in a separate pan, one at a time, for about 30 seconds on each side.
  4. Lay a warm tortilla on a plate and spoon a generous scoop of the egg mixture in the center.
  5. Top with black beans, cheese, and avocado slices.
  6. Roll up the burrito, tucking in the sides for a tight seal. Place seam-side down on the plate.
  7. Serve hot, accompanied by salsa.

Notes

Make filling ahead of time and store in the fridge. For extra crispiness, try air frying the assembled burritos.
