- 1 bag frozen tater tots
- 1 pound ground beef or turkey
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup salsa
- 1/2 cup sour cream
- Chopped green onions for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Cook the ground meat in a large skillet over medium heat until browned and cooked through.
- Drain excess fat from the meat.
- Stir in taco seasoning, black beans, and corn; cook for an additional 2-3 minutes.
- Spread the meat mixture in a baking dish.
- Layer frozen tater tots on top of the meat mixture.
- Pour salsa over the tater tots.
- Sprinkle shredded cheese over the tater tots.
- Bake for 25-30 minutes until golden brown and crispy.
- Serve with a dollop of sour cream and garnish with green onions.
Notes
Assemble the casserole a day in advance and store in the fridge; reheat before serving. Customize with different beans or cheeses as desired.
