Description

A comforting and festive dish featuring crispy tater tots layered with seasoned ground meat, black beans, corn, and zesty salsa, topped with melted cheese.


Ingredients

  • 1 bag frozen tater tots
  • 1 pound ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • 1/2 cup sour cream
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook the ground meat in a large skillet over medium heat until browned and cooked through.
  3. Drain excess fat from the meat.
  4. Stir in taco seasoning, black beans, and corn; cook for an additional 2-3 minutes.
  5. Spread the meat mixture in a baking dish.
  6. Layer frozen tater tots on top of the meat mixture.
  7. Pour salsa over the tater tots.
  8. Sprinkle shredded cheese over the tater tots.
  9. Bake for 25-30 minutes until golden brown and crispy.
  10. Serve with a dollop of sour cream and garnish with green onions.

Notes

Assemble the casserole a day in advance and store in the fridge; reheat before serving. Customize with different beans or cheeses as desired.
