Description

Delicious mini berry pies with a crispy, flaky crust and a juicy berry filling, perfect for any occasion.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup sugar
  • 1/4 tsp salt
  • 34 tbsp ice water
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup sugar (for filling)
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1/4 cup rolled oats
  • 1/4 cup brown sugar
  • 1/4 cup flour
  • 1/4 tsp cinnamon
  • 2 tbsp butter, melted

Instructions

  1. Preheat your oven: Set it to 375°F (190°C).
  2. Prepare the crust: In a mixing bowl, combine flour, sugar, and salt. Cut in butter until it resembles coarse crumbs. Gradually stir in ice water until a dough forms.
  3. Roll out the dough: Roll dough to about 1/8-inch thick and cut small circles for mini pie tins.
  4. Prepare the filling: Mix berries, sugar, cornstarch, and vanilla extract until coated.
  5. Spoon the filling: Fill the prepared crusts with berry mixture.
  6. Make the crumble: Combine oats, brown sugar, flour, and cinnamon. Drizzle with melted butter and mix until crumbly. Sprinkle over the filling.
  7. Bake those mini pies: Place on a baking sheet and bake for 15-20 minutes until golden brown.
  8. Cool and serve: Let cool before serving, optionally with vanilla ice cream or whipped cream.

Notes

Chill the butter for a flaky crust. Use ice-cold water for the dough. You can use frozen berries if fresh ones aren’t available.
