Description

Delightful mini cheesecake bites with a creamy filling and a crunchy graham cracker crust, perfect for any occasion.


Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • Toppings: fresh fruit, crushed Oreos, chocolate drizzle

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix the graham cracker crumbs with the melted butter until well combined. Press the mixture into the bottom of mini muffin tins.
  3. Blend the cream cheese, sugar, and vanilla with an electric mixer until smooth and fluffy.
  4. Add the eggs one at a time, mixing until just combined.
  5. Pour the cream cheese mixture over the crusts in the mini muffin tins, filling them about 3/4 full.
  6. Bake for 15-20 minutes, or until the centers are set but slightly jiggle.
  7. Cool at room temperature before refrigerating for at least 2 hours.
  8. Add your choice of toppings before serving.
