- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- Toppings: fresh fruit, crushed Oreos, chocolate drizzle
Instructions
- Preheat your oven to 325°F (160°C).
- Mix the graham cracker crumbs with the melted butter until well combined. Press the mixture into the bottom of mini muffin tins.
- Blend the cream cheese, sugar, and vanilla with an electric mixer until smooth and fluffy.
- Add the eggs one at a time, mixing until just combined.
- Pour the cream cheese mixture over the crusts in the mini muffin tins, filling them about 3/4 full.
- Bake for 15-20 minutes, or until the centers are set but slightly jiggle.
- Cool at room temperature before refrigerating for at least 2 hours.
- Add your choice of toppings before serving.
