Instructions
- Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.
- Whisk the dry ingredients: In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. Mix well and set aside.
- Cream the butter: In another bowl, beat softened butter until fluffy and pale.
- Combine the wet ingredients: Add eggs, peach nectar, champagne, and vanilla extract, mixing until well combined.
- Bring it together: Gradually fold the dry ingredients into the wet mixture, stirring gently until just combined.
- Fill the liners: Fill each cupcake liner about 2/3 full with batter.
- Bake: Place in the oven for 15-18 minutes, or until a toothpick comes out clean.
- Cool & frost: Let the cupcakes cool completely before frosting with champagne frosting and topping with peach slices.
