Description

A delightful carrot cake that is moist, flavorful, and topped with creamy cream cheese frosting, perfect for any celebration.


Ingredients

  • 2 cups grated carrots
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 8 oz cream cheese
  • ½ cup unsalted butter
  • 4 cups powdered sugar
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, ensuring ease of release.
  2. In a large bowl, mix together the grated carrots, granulated sugar, brown sugar, and vegetable oil until everything is well combined.
  3. Add eggs one at a time, mixing thoroughly after each addition until the mixture is smooth and cohesive.
  4. In another bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt. Gradually add these dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix; a few lumps are perfectly acceptable.
  5. Stir in the vanilla extract.
  6. Divide the batter evenly between the prepared cake pans, smoothing the tops gently. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
  8. For the frosting, beat the cream cheese and unsalted butter together until smooth. Gradually incorporate the powdered sugar, mixing until everything is combined. Finish with the vanilla extract.
  9. Once the cakes are completely cool, spread a layer of frosting on top of one cake layer, place the second layer on top, and frost the top and sides of the cake.
  10. Slice, serve, and enjoy!

Notes

For a lighter version, substitute vegetable oil with applesauce or melted coconut oil. You can also mix in crushed pineapple or chopped walnuts for added flavor.
