Description

Delightful foil packets with tender chicken, juicy mushrooms, and vibrant broccoli, all roasted to perfection.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup sliced mushrooms (shiitake, cremini, or button)
  • 1 cup broccoli florets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Fresh herbs (optional, such as thyme or rosemary)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut two large pieces of aluminum foil, roughly 12 inches by 12 inches per packet.
  3. Toss the chicken breasts with olive oil, garlic powder, onion powder, salt, and pepper in a mixing bowl.
  4. Place the seasoned chicken in the center of each foil piece.
  5. Top the chicken with the sliced mushrooms and broccoli florets.
  6. Fold the foil over the chicken and vegetables, sealing the edges tightly.
  7. Position the packets on a baking sheet and bake for 25-30 minutes until the chicken reaches 165°F (75°C).
  8. Carefully unwrap the packets to release steam, and serve hot.

Notes

Prep the packets up to 24 hours in advance for enhanced flavors. You can also use an air fryer set to 380°F for faster cooking.
