Description

Refreshing no bake mini cheesecakes with tangy key lime flavor and a buttery graham cracker crust.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup key lime juice
  • 1 tablespoon lime zest
  • 1 cup whipped cream for topping

Instructions

  1. Combine graham cracker crumbs, sugar, and melted butter in a mixing bowl until mixture holds together.
  2. Line a mini cupcake pan with cupcake liners and press the crumb mixture firmly into the bottom.
  3. Beat the softened cream cheese with an electric mixer until smooth and creamy.
  4. Add powdered sugar, key lime juice, and lime zest, mixing on low speed until well incorporated.
  5. Fold in the whipped cream gently with a rubber spatula.
  6. Spoon or pipe the cheesecake mixture into the prepared crusts, filling generously.
  7. Cover with plastic wrap and refrigerate for at least 2 hours until set.
  8. Top with additional whipped cream and a sprinkle of lime zest before serving.

Notes

For a firmer crust, chill for 30 minutes before adding filling.
