- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1/2 cup key lime juice
- 1 tablespoon lime zest
- 1 cup whipped cream for topping
Instructions
- Combine graham cracker crumbs, sugar, and melted butter in a mixing bowl until mixture holds together.
- Line a mini cupcake pan with cupcake liners and press the crumb mixture firmly into the bottom.
- Beat the softened cream cheese with an electric mixer until smooth and creamy.
- Add powdered sugar, key lime juice, and lime zest, mixing on low speed until well incorporated.
- Fold in the whipped cream gently with a rubber spatula.
- Spoon or pipe the cheesecake mixture into the prepared crusts, filling generously.
- Cover with plastic wrap and refrigerate for at least 2 hours until set.
- Top with additional whipped cream and a sprinkle of lime zest before serving.
Notes
For a firmer crust, chill for 30 minutes before adding filling.
