Description

A nostalgic cherry pie with a sweet and tart filling hugged by a flaky crust, perfect for any gathering.

Ingredients

Scale
  • 2 cups fresh or canned cherries (pitted)
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon butter
  • 1 pre-made pie crust

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine cherries, sugar, cornstarch, lemon juice, vanilla extract, and salt in a mixing bowl.
  3. Fill the pie crust with the cherry mixture and dot with butter.
  4. Cover with a second pie crust or create a lattice top.
  5. Bake for 30-35 minutes until golden brown and bubbly.
  6. Cool before serving to allow the filling to set.

Notes

Consider letting the cherries soak in water for 30 minutes to enhance their sweetness. You can prepare the filling a day ahead.
