Description

A wholesome and flavorful one-pan meal featuring juicy chicken, crisp green beans, and tender baby potatoes glazed with balsamic vinegar.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 pound baby potatoes, halved
  • 1 pound green beans, trimmed
  • 1/2 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Whisk together balsamic vinegar, olive oil, honey, minced garlic, salt, and pepper.
  3. Add the chicken breasts to the bowl and toss to coat.
  4. Arrange the halved baby potatoes and green beans on a large baking sheet.
  5. Place the marinated chicken on top of the vegetables.
  6. Drizzle any remaining marinade over the chicken and vegetables.
  7. Bake for 25-30 minutes or until the chicken is cooked through and the potatoes are tender.
  8. Garnish with fresh herbs if desired, and serve hot.

Notes

Marinate the chicken a few hours in advance or the night before for enhanced flavor. Customize vegetables or add red pepper flakes for heat.
